Meet the Baker
Little Foxes Bakery is a small home bakery run by Ellie. With a husband in the Navy and two little foxes of our own, life involves a lot of baking!
The name Little Foxes has very special meaning. My Grandpa came to England from Latvia after the Second World War with just five shillings in his pocket, which he spent on a punnet of cherries. His family farm back in Latvia was called Little Foxes Farm, and he later gave the same name to his home in England. It felt like the perfect name for my bakery, and a lovely way to honour my late Granny, who taught me to bake when I was little. I still treasure her well-worn Bero recipe book, complete with her handwritten notes.
Little Foxes Bakery was established in 2022 after the birth of my second little fox.
What started as a way to fill quiet evenings while my husband was deployed soon became something much more. I've even posted cookies out to him and his shipmates on board ship!
I began by sending letterbox cookies to homes across the UK through Etsy, before moving on to creating biscuits for friends starting new adventures overseas. From there, my love for baking (and decorating!) just kept growing.
Since then, I’ve baked for local village celebrations like D-Day Weekend and the Coronation party, run seasonal biscuit-decorating workshops, stocked local cafes with cookies, made corporate biscuits for other companies and charities and baked thousands of handmade biscuits with customers near and far.
Every bake is made with care, a love of tradition, and a little family history in every box.
